Make mine Sunnyside up!


Heat a small amount of butter, or olive in a nonstick skillet over low heat. Usually about 2.5 to 3 minutes. Two eggs fit nicely in a medium size pan.


Crack the first egg and gently add it to the skillet – primarily to one side – so there is space for the second egg. Your pan is too hot if you hear a sizzle. You should NOT hear a sizzle, so be sure to turn it down. Repeat with the other egg, adding it to the other side of the skillet.



Cover the pan with a tight lid and cook until the whites are solidified but the yolks remain runny - about 2 to 2 1/2 minutes. Peek in occasionally. Do not remove the lid until after 2 minutes. The eggs easily should slide out of the tilted pan on to a plate – season with salt and pepper and serve.
