South’s Best Biscuits

2 cups buttermilk

6 cusps self-rising flour

2 packages yeast

¼ warm water

1 teaspoon baking soda

½ cup sugar

1 cup shortening

Add yeast to warm water. In a large mixing bowl, whisk flour (sift if needed), sugar and baking soda. Add quarter parts shortening and buttermilk until all added. Knead and cover. Place bowl into refrigerator until chilled. Once chilled remove a portion of the dough and roll out on floured surface. Roll out until dough is ½ inch thick. Use a round cooking cutter or an upside down small coffee mug to cut biscuits from rolled dough.

Place biscuits on backing sheet and let “rise” in warm area for 60-90 minutes.

Preheat oven to 400 degrees. Bake until golden brown.
