High-Rise Pancakes

Amount yields six pancakes.


3 tablespoons vegetable oil

1.5 cups all-purpose flour

1.25 cups milk

2.5 teaspoons baking powder

1 egg beaten

.75 teaspoons salt


Using a large bowl add flour, baking powder, sugar and salt – whisk together. In a separate small bowl add egg, milk and oil mix thoroughly. Add all the contents of the small bowl into the large bowl. Mix well with spoon until lumpy. Do not beat or over mix.


Add a small amount of oil to griddle or pan. Heat pan until a small drop of water dances about the pan. Add pancake batter cook until bubbly and turn with spatula. Serve with warm maple syrup.
